docs(changelog): regenerate full history for v0.1.0

Replaces the stale CalVer changelog (last updated 2026-06-02, all
referenced tags since deleted) with git-cliff output simulated against
the v0.1.0 tag — matches what release-binaries.yml will publish as
release notes.
